Gaskets are not the issue here, although they did upgrade them. Its the poor quality head bolts that stretch and alow gasses to seep out causing erosion of the gaskets themselves. ARP studs will solve this even with an 11k lb trailer.

If you want to go crazy, get fire ring gaskets. They are expensive and require machining of the heads. If you are only looking to go mildly overboard, there are wire ring gaskets, however, their site recommends the Ford stock head bolts only be used (I have no idea why...)

The stock gaskets and ARP's will hold extremely well if your diesel tech is compitent by checking flatness and performing a proper install.
