I went with the remans to save money. Personally, I don't think you'd go wrong if you did decide to get remans. Ryan Casserly builds the injectors for Bean, and his specs on them coming out of his shop are tighter than what they are for brand new ones from Ford/IH. I think his have to flow within 3 cc of each other, while factory is like 7-8.
Not sure on trans temp, but you can run your exhaust temps around 1300 all day and not hurt anything, and even higher than that for short bursts. A lot of people say if you go over 25 psi on your stock turbo you're on borrowed time, but I've been doing it for several years and at 195k I still have the original turbo. I hit mid 30s now, and I've heard of people hitting 45

Factory head bolts are good to about 40 psi, so you won't have to worry about those.
