The only actual oem "gauges" in my truck are the speedometer and the tach. All the others are (nearly worthless) idiot switches that just go to the middle when their sensor senses a specific setting.

You may be able to get an actual coolant temp reading from the odometer display using the methods described in the owner's manual. If your water temps drop significantly when you're at idle, that would be an indication of a stuck open thermostat.
