Rear doors would be useless in parking lots since 1/3 of the fenders are mounted on the rear doors and you have to open them further anyways to get past the tires.
Since the frame is unique to the Excursion (yes, I know it's similar to the F-series, but it still is not the same) I would be leery of going too high on the rear axle load.
Yes, I think a lowered dually Excursion would look sweet.
