I agree that the most accurate and instant reading is by the thermostat but... Even though many expect instant, instant in not the requirement. The question should be what is normal for the sendor placement and what is the trend of the reading. Being a military trained pilot I probably scan instruments more than most but never react instantly to a qauge. In aircraft, instant reaction requirements are warned with lights and alarms. What I look for in my qauges are what is a normal reading, what is an under load reading.

For example, if my temp is going up and follow and see if it stablizes (short of boil over). If it doesn't stabilize within expected range I increase cooling fluids (turn on heater) and see if that stabilizes it. If not I decrease the work load or pull over
