It's a known problem. The computer purposely defuels when EGTs rise in the EGR system. There is nothing wrong with your truck, and there was likely nothing wrong with your recently replaced high pressure turbo either.
Lemme guess, you were towing uphill in hot weather and the beginning of the hill was fine? Then the power drops off?

Yes, I see this problem every time I go up a long, steep pass. As soon as the EGT reaches 1450 degrees, de-fueling kicks in resulting in loosing boost and power, but EGT drops down to about 1300 (for a while). After a while, the de-fueling stops, power and boost returns and EGT shoots up again. Apparently there is nothing one can do about it other than manage the EGT to remain around 1400 tops by easing off the accelerator....
