I remodel kitchens for a living. It amazes me how people believe that counter tops are as durable as, say, the top of my table saw. Tile is tile. Granite is granite. Plastic laminate is plastic laminate. They are nice products but they are what they are. What they are not is a good product to be beating on with a hammer, mallot, rolling pin, or other masses of weight.
You need a large enough surface to distribute the weight, the energy of the blows, over a large enough area to reduce the PSI pressure on the counter top.
That is why many resturants have a large, independant, self standing, chopping block in the kitchen. To beat their meats on. Chop their vegetables on.
Oh, and don't use a chopping board with the little feet on it. That just concentrates the psi onto the location of the feet.
