Mostly it's based on price. I don't think more expensive vegetable oil makes better fuel, it just tastes better in its natural state (but your engine doesn't care!) So I'd look for the cheapest, which I think is usually soy oil. If you look closely at the labels you'll notice almost all "vegetable oil" these days is soy oil.
