I am considering a 8" coil over front and rear. I really don't want to run anything over a 38" tire. I wouldn't mind a 6" but haven't found any that have the coil over option.

Coilovers front and rear at a 6"?

We can do a coilover front 6", but in the rear you'll get more travel out of a leaf spring and shock.
