Just sold my '97 F-250 supercab longbox powerstroke and bought a '00 Excursion limited with all the options. Quite the difference, definitely love the size of this rig too.
Anyway, I was reading through the owner's manual and it exlained that due to the computer chip in the keys on these things, a remote start system would not work. After market remote start system, I presume -- does anyone know of Ford (or any manufacturer for that matter) has a remote start system for the Excursion?

Good News, yes you can have a remote start on the Excursion. I haven't installed one yet, but you will need to purchase a "Bypass Kit" for the FORD "PATS". PATS is the anti-thieft, but to make the bypass work you will need a real copy of the key made with the chip in it programmed. This key will be taken apart and the chip used by the bypass. I had three extra keys made when I bought my truck just so I had two spares and a third for the remote starter that I plan on installing one year.
Erlong, I put a remote start on my wifes grand marquis without the bypass kit. It was Dec.23 and I wanted to surprise here for X-mas. Not knowing we needed the bypass until too late I finally took the igniton switch out and removed the sensor which fits around it. After removing it I simply wire tied the key to the sensor and folded it back under the dash. Now extra keys are a dollar instead of $35. It may not be the proper way to do it but has been foolproof over a year. Good luck either way.
You really didn't even need to do all that work. I remember reading on one of the sites that makes remote starters that a bypass kit is not necessary, but you will have to remove the chip from a key, wrap a wire around the chip multiple times (7 I think) and this will work just as well as a $35 bypass.
There are plenty of web sites that have detailed instructions on how to do this type of install.
Hope that this is in time to help. I just purchased a DEI Python 1500ESP and it has remote start and has a cool chip adapter so there is no need to sacrifice a key like before. Everything works great and an added bonus is a pit stop feature that allows you to set a 12 or 20 minute shutdown timer and leave the truck to cool down with the alarm armed. Good Luck
