Uh oh! There is no way I can get the gauges installed before I leave on my next towing trip - about 600 mile roundtrip from West Michigan to Mid-Ohio (pretty flat terrain) what can I do to try to NOT burn up my turbo and/or tranny? planning on running approx 68-70mph in tow mode pulling approx 5k lbs. Jody at DP thought I will be fine.

FYI, I have done the cat back exhaust modification - with a Dymomax straight thru muffler.

Well our machines are a bit different due to model year but I'm not sure exactly how. And because the E-series are always behind compared to F-series I'm hesitant to say that you have the same exact set up as a '97 SuperDuty. What I can tell you is that my '01 runs hotter with the chip than when in stock mode and with the vans lacking intercoolers, unlike the trucks, I have to keep an eye on EGT's as they will creep up to detrimental temperatures. How exactly your 7.3 differs from mine I don't know, but what I do know is that you're towing about half the weight that I normally do so that alone will surely work in your your favor.
