Fan clutch

Well I finally installed a new fan clutch (Ford parts $162) to cure my overheating problem. I think it is working better but where I am in Vermont it has been too cold lately to get it hot enough. I a leaving on a trip to Costa Rica in a few days and don't wan't to worry about it. I have an Isspro water gauge and it won't go above 220 right now. I'm having a hard time telling if fan is engauging because hills on the highway aren't long enough here. When do you guys here or feel the fan clutch turn on ?
My transmission should be set for the trip seeing I just spent 1800 on a new one. A word of advice to E4OD owners who have not had a proper rebuild. Get your tranny upgraded before it blows up! I bought my retired ambulance this summer and it had a rebuilt tranny last spring. It worked excellent until last week when I drove to southern Mass. to pick up a used rear end. On the way home it died. Local shop did all sensor diagnostics before rebuild and they were all fine. When they looked inside they said the recent rebuild was done with stock parts and no upgrades. They do a lot of testing for trans companies and say this new one is indestructable. They do a lot of Ford warranty work and rebuild a lot of local plow trucks and wreckers. If I had taken my tranny in when it was still working fine I could of had the upgrades done for a lot less than this time around.

Can we get any details about this? What defines a "new" transmission? What upgrades are we talking about? What years, etc.? Anything a 99.5 owner need be aware of?
