Per the service manual - SIX (6) quarts of 5W-20 with a filter (do yourself a favor and get a Motorcraft FL-820S at Wal-Mart).
The cooling system holds 28.5 qts, or 7 1/8 gallons. I normally drain the system, flush it with 4 gallons of distilled water, drain it again, add 4 gallons of coolant, and add 3-4 gallons of distilled water until the level is between min and max on the de-gas tank.

One thing, in the owner's manual and elsewhere, Ford says to put in six quarts, and then check the oil. If it's between the FULL and ADD marks, DO NOT add any more oil.
There's this quirk that the V10 has, when you start it up, and move it a few feet, and shut down, say about 1 minute running total, and then restart the next day, you may get a big POOF of blue smoke. Mine did that regularly. But I was also adding oil all the way to the FULL mark on the dipstick. When I went back to only 6 quarts total, it hasn't done it since.
