did ford ever offer a 6spd in an X? How difficult would it be to put one in? Or just go w a torqueshift

There never was a manual trans X. If you had a complete Fseries to take all the parts you'll need it would be a lot of work, but possible.

Installing a manual trans in this truck would be FAR easier than installing a TorqShift.
