Did you fill it, in order to top it off, or did you do a complete from-empty fill? If the latter is the case, you might possibly have an air bubble that worked its way up to the top, which would lower your coolant level. Fill it again to where it's supposed to be and monitor it. If it goes down again, check your hoses, to make sure you don't have an external leak. If there's no external leak, check your oil for signs of coolant. If there is coolant present in your oil, have your truck towed back to whoever it was that did the headgasket work and tell them to recheck their work.
