Which oil is the best?

I have found a few sources for WVO. Which one is the best and why?

Most of my sources use Soybean Oil.. One uses Canola Frying Oil. I try and stay away from any restaurants that use "creamy liquid shortening".. this is partially hydrogenated oil. I'm not sure which is the best but I would look for oils that don't gel too easily at low temps.
