Is it the bits and pieces of crumbs, food, etc., that just sit in the dumpster and rot? Can it be avoided if you constantly drain it?

I'm talking about the oil at the back of the restaurants. You brought up a point though. When processed correctly, does that terrible smell go away? Does it stink up the garage?

Smell is a individual perception to a large extent.... I like to smell my farts but my wife pukes haha.
I would stay away from TERRIBLE smelling oil. It should only smell like the food that was cooked in it. I would suggest visiting some places that dont use those commercial dumpsters... find a place with a 55gal drum and take a small sample. Try a pizza shop (tho they use pho oil many times fyi)
Alot of those dumpsters I have seen restaurants dumping solid food waste into.
Used [dry] oil tends to take on the odor of what was fried in it. Wet oil allows bacterial growth over time. Once rancid I have not found a way to neutralize the odor short of tossing out all the oil and drum. It definitely gives me a gag reflex. Oil stored in an open drum in the hot sun can oxidize over time. Oxidized oil smells like paint or paint thinner and should not be used. To avoid water in the first place it's best to get the drum or dumpster out of the rain but even if wet, it can be filtered, dried and used if not rancid. Maybe you should dose the dumpster with a good biocide?

as stated--smelly oil is the cause of bacteria growing in it--ive gotten oil like that--i just leave it in the closed drum during the wonderful iowa winters--kills all the bacteria!!!!!!!!!
