When the truck is at a dead stop or rolling, or even coasting at 55 it takes about 1/8 of the pedal down before it reacts to the throttle, it's not a hesitation, I could hold the pedal down a bit and nothing will happen. Anyone know what causes this?

I would check the pedal circuits with a scan tool to start. Autoengenuity or ford IDS are best, but any scan tool that will allow you to check for any codes and let you view engine PCM parameters will do.
Make sure there is no lapse in the signal from idle until it engages again. Best on oscilloscope mode. You should see a steady signal increase from 0 to wide open throttle. Any drop in the signal would indicate there is an issue. Could be the peddle, wiring, or pcm.
