Actually I do use my AutoEnginuity to monitor my parameters on the fly. With my history of vehicle testing, I'm used to having a laptop in the vehicle for real-time observation. We used a laptop but would most often also have a moderate sized monitor setup at the dash for easy reading. I'm not about to invest in an additional screen for my personal use, but I can place my laptop on the trans hump facing me and read the parameters I've set up. The laptop is secured with Velcro that hooks to the carpeting. I don't do this all the time, but maybe once or twice a month.
But if what your really just concerned with is the engine oil and coolant temps to know how your cooler is doing, there are easier ways. The most basic is with just gauges for these two items. Just make sure you check calibration of the gauges before the install using a boiling water check. Otherwise you can drive yourself crazy if there is a discrepancy.
Another option if you want to use the vehicle sensors is to get a Scangauge.
