Something I would love to do is install the center console out of an expedition. It goes clear forward to the dash, eliminating a place for my wife to store crap that ends up under my feet while driving. It would also benefit me in keeping me from twisting my right hip socket by having something to lean my leg against. I'm 6'3" barefoot and there just isn't enough leg room for me without doing "the twist" which is very painful and ends up hurting my low back as well.
While I had the interior out of my excursion, I bought a rubber mat that is for horse stalls and cut it up and glued pieces inside the doors and in various places in the interior to absorb mid-frequency road noise. I also installed tubing in the door gaskets to firm them up. I'm installing a scanner and cb in my current stock center console for now and adding a light inside of it. I moved the brake controller to the front of the cup holders on the center console. It is out of reach on the dash and nearly cost my wife and I our lives when she jackknifed the trailer coming down a hill and couldn't reach the controller.
Those are practical things, not ornamental.

Thanks guys, the rear seat is factory, with the factory leather, just the suede as insets. the fronts I had the better leather put just on the sides, on my last truck that is where is wore out fastest, from rubbing my back side across it when I get in and out. I had a local upholstery shop do it for me, marine grade suede, been in about 35K and no blemishes yet

I went to a custom car and hotrod show a couple years ago and looked at interiors. If you haven't done that, I would highly reccomend it for ideas. I would bet that there were interiors that cost $30k and up, as well as just some really innovative ideas that weren't all that expensive that you could incorporate- lighting changes, dash mods, upholstery (including dash, door panels, center consoles, headliners, carpet, and yes, even seats) that left me speechless (Yes, me speechless- that takes some doing).
In my opinion, it's the unusual but clever stuff that impresses me- For example, I would love to get rid of the steering wheel and install a "fly by wire" control stick at an ergonomically perfect location for my right hand. That way there is nothing directly in front of me to block my view of the speedo and gauges. That is a constant problem for me because of my height and I have been busted for speeding because of it. To see the speedo with the wheel adjusted down where it is comfortable for long drives, I have to crouch down or lean forward and stretch up- The top of the wheel blocks it otherwise and that really bugs me.
Removing the steering column would be pretty easy if you had something like a Rock-Ram steering set up. Blinkers, cruise and whatever else could be rewired into the lid of the center console...
Just my wild idea that I've had floating around in my head for years.
Just think- I'd have room for a TV tray full of grub right in front of me...
I took an upholstery class about 12 years ago at the local voc-tech college. That was a fun class and I really learned a lot. If you want to modify your upholstery, I reccomend taking a class like that so you know what you are getting into- like being able to pick out different grades of foam- For example- "cold cure" is many times better than 99% of the foam that is sold, but it is expensive- yet who wants flattened foam in their custom upholstry job? I can't sew a straight line but nobody would be able to rip me off on materials because I know the difference.
Good luck with your project- I think your truck looks beautiful and I truly love that color.
