If you're in the right forum, then you don't have a Dana 10.5 rear axle. If your pickup has single rear wheels (SRW) you have a Ford-design rear axle with a 10.5" ring gear. If your pickup has dual rear wheels (DRW), then you have a Dana 80 design rear axle with a 11.25" ring gear.
As to how much friction modifier, you may need none, or one bottle, or at most two bottles - depending on which brand of diff lube you buy. Some brands of 75w140 synthetic gear lube say you don't need to add any friction modifier for your limited slip axle. Ford has conflicting requirements - in one place they say 4 ounces and in another place they say 8 ounces.
So first read the label (and the website) of the brand of diff lube you install. If it says you don't need friction modifier (Royal Purple, Amsoil, and maybe others), you probably don't. If you do need some, I'd pour in only 4 ounces (one bottle), then button it up, drive a coupla miles, then do some figure eights on a parking lot with high traction surface such as rough concrete. If you hear the LS clutches making a racket, then add another 2 ounces and test it again. You should never need more than 8 ounces.

The Ford owners manual also calls for SAE 90 W Gear oil for the front differential all I can seem to find is the 80 W-90 .. Would this work ?

You don't say the year or model of your truck, but if it's a Dana 60 front axle, the workshop manual now calls for:
Motorcraft 80W-90 Premium Rear Axle Lubricant XY-80W90-QL (US); CXY-80W90-1L (Canada) (Model 60/70 axles)
SAE 80W-90 Premium Rear Axle Lubricant
