Just a quick question. I am wanting to go with 285's on my stock rims. Will I be rubbing anywhere?? I know some guys don't like the thought of 285's on a thinner rim, but that is not my question.
That's what I've had for over 10 years, 285's on the stock steel rims. No rubbing issues even before I added the leaf up front.

95 2 wd with 285/75, only problem was a minor rub on the front torque arms at a full lock turn that you should not have on a 4x4.

'95 F250 ext cab long bed, PSD, 5 speed, 2 wheel drive, 3.55 gears, 286,000 miles, Edge Evolution CTS (LINK TO MY REVIEW), LUK clutch, homemade REAR BUMPER, open element AIR FILTER, 36" ARE contractor cap. With tools, full of fuel and me on board (300 lbs) steer 3620, drive 3860 total 7480.
The 285/75R16 is about as high as you can go without rubbing. 315/75R16 is the about the biggest you can go on the stock 16x7 wheels but will rub and it's not recommended on the F-250/Dana 50 front axle without some aftermarket suspension parts.
That being said, I've had Dayton Timberline 285/75R16, Cooper Discoverer 285/75R16, Wild Country 255/75R16, and now Wild Country 285/75R16 on my F-350 and the Dayton's lasted right at 50,000 miles.
Bottom line, 285/75R16 tires are just fine on a stock rim.

295/17 Nitto Terra Grapplers and i love 'em! No rub. Previous tires (2 sets) of 285 BFG KO's and were ok, but loaded up quickly. These Nitto's are bad azz, quite as the KO's are and are CHEAPER.

i run 285s on my stock aluminum wheels on my 97 and no rub what so ever, even when in a bind. they are also nitto terra grapplers and like 94strokerace said i love them. the are alot cheaper and they last just as long i got almost thirty thousand on mine and still prob half tread maybe little less. if your truck 4x4 i say go for it you should have no troubles!

There's another option too. 285/60-16 tires. With this size the width is more than enough to be way out of spec for a 7" wheel which is very desirable, plus the height is low enough to not rub. You can get kind of a low rider type look. Also either 285 will crown due to too small wheel for the tire, which is what you want so you get kind of a rounded profile motorcycle tire effect.

1997 F350CC, 4x4, PSD Tipper pro kleenex open filter. Roggen 6" lift kit with 26" ratflex 12" offset tires. Downpipe cut and welded to adapt 3" into a 12" outlet. 12" muffler cut and adapted to 2", then a special turbo manifold from a volkswagon modified to flank out to 3" to the tail pipe. Interior from a Corvair modified by cutting 6" off the padding. Snize and snide 32gallon aux tank mounted in rear seat, rear seat relocated to bed. Bed shortened to 4ft.

Ron, you are right, a quarter inch on each side is WAY out of spec!!!! Sheesh. Read the original post before you leave a comment.
Alright guys, here is an update!!! I went with 295/75R16 Nitto Terra Grapplers! They are great and they ride smooth. I just had to trim a little off the inside of the bumper. Thanks for all the feedback!
