Curious as to what the towing and braking dynamics would be, as well as how hard it would be to back up. Just something I have recently become curious about.

Backing would be a bear! Years ago I pulled an inline two horse trailer, those have one axle at very rear and a steer axle at front (like a wagon). You have to back them opposite of a regular trailer, and they were very difficult to back. A dolly would have to be backed this way. The inline also only had brakes on rear axle. With the dolly having brakes...??? Seems you could have fishtailing issues, but the inline I used to pull did not fishtail, so maybe. The dolly basically turns the fiver or gooseneck into a wagon. If you pull with a van or excursion then maybe the dolly is a way to go. If you have a truck, I would prefer the hitch in the bed. Seems like the dolly would always compromise some stability over an "in the bed hitch".
Bottom line, I would want to test drive one before buying. We RV with our fiver, I have never seen a rig with a dolly under it at a campground.

When you get a chance.... look at what that guy was actualy doing. He was building a monster double living Rig. On a truck was basic living quarters and on second trailer he was using this dolly to attach another total living room area.
I do not know why he is selling the dolly now. But its a part of a massive project he has many pictures of. Impressive stuff.
He is either a genious or a nut. Or both!

I am pulling cattle trailers out of Bryan TX bring them back to KY, I pull doubles now but no dolly. I pull the bigger of the 2 trailers hooked to my truck then Gooseneck Mfg bolts a plate and channel in the first trailer with all the wire hook ups and ball and the shortest trailer connected to it. The dolly thing I have not used and dont know any pulling doubles out of Gooseneck that uses them. Gooseneck Mfg always hooks the trailers up to each other.
Here is a link to a post where I posted my first trip to Bryan back to KY. These were my 24' then a 20'
Ricki, while your method works for the steel stock trailers with no neck compartments, most of the guys dragging horse trailers and the higher end stock trailers use the dollies.
Look at the head for this site. These guy deliver for sundowners as well as the manufacturers in Madill (CM, S&H, and W W)
