I have a choice between 2 trucks and I’m looking for your opinions on which truck will better suit my needs.
The truck will be used for pulling a camper (me, wife & 3 children). I would like to be able to pull a trailer with a skid steer, boat, car/pickup hauler, dump trailer hauling and any other type of hauling needs. I don’t have a camper or the trailers mentioned here and I’m starting with the truck.
Truck choices:
1. 2000 F-250 7.3L diesel, 324,000KM (202,000 miles), 4x4, super cab, long box, single rear wheel
2. 2006 F-350 6.0L diesel, 225,000KM (140,000 miles), 4x4, crew cab, short box, single rear wheel
Which one should I pick and why? Which one is a more capable hauling rig?
By 2006 they worked out most of the problems. With the kids you will like the crew better.
If money were not an issue that would be the seller to me.

Add fuel to that it jumps to 16.5 cents per mile over the life of the truck.
A 7.3 with 200K is still a young engine. A 6oh with 140K ain't so young. If it hasn't had major work done yet, it soon will. No warranty on either? I say go with the 7.3 and save the headaches!
2006 F350 CC LWB Dually XLT Oxford white manual 4x4 6.0 PSD 6 speed. 4.10 LS front and rear, Built May05. 4" turbo back, 55 gal aux fuel tank. A real pig from a stop, give me 15' and she'll slowly come to life, then watch out!
165K miles, 12 injectors, EGR cooler, Fuel pump, 8 glow plugs, GPCM, FICM rebuilt FoMoCo engine at 150K under 7/200 warranty.
I bought an old (95) F250 in 2000 (still have it) and several times have wished I had the F350 SRW for the increase in GVWR (in 1995 the F350 SRW was 9900, the F250 was 8800). I bought an extended cab F250 in 2000 and almost daily have wished I had a full crew cab. My son cannot fit in the back seat even with nobody and nothing else in the truck. He was 12 years old when when we bought it, is now 6'4" and the back seat is not even an option.\
I would have no use for a short bed (I haul way too much stuff way too often) but the other advantages of the 2006 far outweigh that one issue and that is also for my needs, not yours.
My choice would be the F350.

I agree with Blackout. Find a crew cab LONGbox 7.3 F350 and go that route. I have the extended cab shortbox and would kill to find a clean 7.3 like I described.

There is a reason that the 6.0 is an *orphan* engine no longer produced by Ford. Its run only lasted 3 1/2 years. I personally would not even consider one. Jury is still out on the 6.4 liter. OTOH, the 7.3 ran from 1994 to mid 2003 and has a proven track record...
Actually the 7.3 went longer than that. It was used as a non turbo for a while too.

Yeah,
It's because the EPA changed the regs & the 7.3 couldn't meet them, and then the EPA changed them again & the 6.0 couldn't meet THEM. Now the 6.4 is due for retirement due to (you guessed it) new EPS regs for 2011.
