A modern engine installation usually has a wire from the ignition switch to the brain box telling it when to turn the engine on & off. It should still be possible to install a shutdown timer by interrupting that wire.
The one surprise you might encounter is that because that wire carries almost no current, tarnish might build up on the timer points. The arc which results from interrupting current serves to keep switch points clean, and there won't be any arc in this case. It'll take a year or more to crop up.
To prevent this, select a timer with precious-metal contact points rated for "dry contact" or "logic level" switching.
