Possibly no to #1, it depends on which setup you have. If you have the backup camera that displays in the rear view mirror, then yes, but if you have the one that displays on the nav radio screen, no. The nav radio version displays not based on a backup light signal, but rather via CAN bus data from the transmission control module. It isn't impossible to manipulate this data, but it is vastly more complex than just adding a switch.
On #2, it should be possible to do this. Looking at the parking aid diagram, cell 131-1 it looks like you would need to switch the four sensor data lines and the reversing lamps input to switch to front sensors and activate the module. Depending on the cost of the parking aid module, it might be easier to just use a second module and not have to switch the sensors. With a second module you'd just have to use a switch (upfitter?) to provide the reversing lamps signal to enable the module when you wanted.
