We cook the whole hog here in North Carolina, for 10-12 hrs on 250.
It comes apart real easy, I guess you could say we pull it apart. I like to use a vinger based sause and deep fry some hush puppys and slaw cold beer, iced tea and let the good times roll.

Had a "joint" near our house growing up.. in Norfolk VA.. North Carolina BBQ.. Shoulders cooked over an open fire then sliced.. the scraps were minced.. vinegar based sauce.. great eating..

Had real Texas beef brisket for the first time this summer, in Texas.. good eating also..

All you Texicans keep making that great brisket.. and come on East for some North Carolina Style BBQ Pork.. best there is..
