Have you read your owner's manual? Do you have one? If not, you can download one here
https://owner.ford.com/tools/account...h-results.html
Appears, from reading my 2015 owner's manual, the rear seat back does not release only the seat bottom. (Page 117)
The head restraints will come off the seat by pressing the release where they slip into the seat back. See Page 113-114 on how to remove them.

On my 2015 you just squeezed the little buttons together and pulled it out. Not sure why you need the seat back down.

Is extended cab the same as crew cab? I have the super cab with the 1/2 doors and the rear headrest are bolted to the cab of the truck. There are 3 clips that hold the rear seat back to the cab. They are hard to find. You need a long screwdriver to release these clips on the back of the seat. They are not easy to find. You have to pull on the seat and look to see them.

Super Cab (SC) is the same as Extended Cab with the 1/2 doors.
Crew Cab (CC) is the full 4-door.
