I pulled the heads. Went back with new head gaskets and new head bolts. While torquing the head bolts from 85ft/lbs to 105ft/lbs I broke a head bolt in between on of the cylinders.

where should I go from this point? What are my options?

I'd remove the head, and the broken bolt, and then re-install the head correctly. The gasket hasn't been run, so it should be good to re-use. I'd also get a torque meter to put between the torque wrench & socket, to check if the wrench is calibrated correctly. If they don't agree, I'd send the wrench off for rebuild, or get one that's right before breaking more bolts.

To add to what Steve said, make sure that you are using the correct length bolt. They can't be bottomed out when torqueing them
