The perfect tire for your needs is LT255/85R16. Several folks make them, including BFGoodrich MudTerrain, Cooper Discoverer, and Dunlop Radial Rover.
The 285/75R16 is a little shorter and a lot wider than the 255/85R16, and might rub between the duals - which is a huge no no.
Your 4.10 rear end will "feel like" a 3.90 with the 255s.
And if your speedo and odo are accurate now, and you don't have it calibrated for the taller tires, then they will be about 4.8 percent slow with the taller tires. I.e., 70 MPH indicated will be 73.36 MPH on Officer Bob's radar. And 400 miles on a tank of fuel will be 419.2 actual miles.
