5W-30 or 15W-40

This has probably been asked a more times than anyone can count but - I am installing a Amsoil by-pass and they are telling be to use 5W-30 Amsoil HD Diesel oil. I have been using 15w-40 motorcraft until this point and it has worked fine. What is the difference in the two weights? I live in Southern California so weather is fairly nice all year around. Thank you in advance and I did use the search portion of this site with little luck prior to the post /ubbthreads/images/graemlins/vulnerable.gif
