I was hauling about 500 Lbs. of payload (groceries, LOL) in the bed yesterday on the Expressway at 75 MPH and my transmission fluid temp was running 160° max.

You want to keep this below 200°F to lengthen the life of your trans.
There is no reason that you should keep it below 200°F. Ford's long term upper limit is 220°F, with a short term limit of 250°F. Nothing magical happens at 200°F.

Thank you for the clarification, I'm still a newbie and learning more every day.
