How hard is it to rebuild the limited slip on my truck? As far as I know the clutches are bad in it.

my auto tech class has all the tools to do it Im just curious if i could do it in a 2 hour class.

Check Ebay. Someone has rebuild clutch kits posted from time to time. Do a search for "Ford 10.5" or "Ford 10.25" I just picked up a 3 pinion posi from an 05 with 20000 miles for $100 to my door.

I think you will be pushing it to get it (the diff) removed, rebulit, reinstalled, sealed and refilled with lube in just two hours. To do it properly you need to let the RTV sealer on the housing cover cure at least overnight or else it will end up an eventual gear lube seeper and leaker.
