I can adjust my rear drum brakes and by the end of the week the passenger side will skid the tire and the other side won't. The driver side brakes are always weaker for some reason. Any ideas on this one?

Probably the self adjusting linkage, star wheel, or whatever is hooked up backwards.

Or there's a leak at the wheel bearing that has soaked the shoes with oil. That will cause them to grab.
I'd recommend pulling both drums to check it out.

Definitely pull the drums and look for anything that stands out. Make sure if you do decide to take them apart you only take one side apart at a time so you have somethin to go off of.
Also inspect the brake lines up from the master cylinder to each wheel. I once had the same problem on my dodge and it turned out a line got crimped on my back driver side caused by a downed tree on one of my off road ventures.
