I have a 2011 F350 and I was looking at the rear leaf springs and I was curious if anyone has ever removed the bottom overload leaf to make the ride more comfortable when going offroad and hitting big bumps. I feel like the rear end bounces when going into dips and on the highway.

If you do that then you will not be able to load the most for your truck. However removing the overload spring won't do anything. The over load spring doesn't do anything till you put a load in the truck
My suggestion to you is try some different shocks. Or in my case I put air bags on mine. They act like pillows and help cushion the ride. They are also adjustable so you can add more or less air. I run 20 pounds empty. I do have a 250 not a 350 like you but it's the same idea. These trucks don't have a car like ride LOL Much better than the old days.

X2 on the shocks. It used to be said that stock shocks were worn out driving off the lot. Most everyone installed better shocks (Bilstein?) I don't know if Ford has gone to real shock absorbers in the later years, but I doubt it.
Springs support the load - Shocks control the ride.

If you want to improve your ride quality, simply ride in a OBS f250/350, then go back to your truck

Or, you could look into Sulastic Shackles for the rear, they help alot, just not cheap

Seriously tho, my best friend has a 2014, it rides like a Cadillac vs mine, but probably your shocks are just bad, get a GOOD set of shocks and then if your still not happy try the Sulastics

Usually the rear end feeling like its floating or jouncing when you hit bumps is a symptom of worn out shocks

You can also try hitting a bump in a hard curve, it will feel completely out of control
