Replacing the rear leaves on my 97 250. Didn't think to check, is there a torque spec for any of the hardware? How about the new u-bolts? Also, forgot to order new bolts for the front of the leaves. Looks like it's 5/8x6". Grade 8 ok, or are they something special?

The factory bolts are metric.

I don't worry about torque specs on the spring bolts. They are there to provide a pivot point, not to hold parts tightly together. I use a locknut and stop tightening once all of the parts are in contact with each other.

You can find torque specs for the ubolts based on their size/thread pitch via a google search.
