How far below the oil pan does the Fumoto valve stick down. Has anyone had theirs ripped off under normal use?

Been there, done that. (Read the discussions on Fumoto valves, not had one ripped off.)

This has been beat to death, but I have yet to see anyone post, "Yes, I tore mine off on a (pick one) [stump] [pothole] [other]."

Crawl under your truck and see how high the oil pan sits, then envision what other critical items (steering linkage, front differential, etc.) would be gone before an obstruction got to the Fumoto valve (which sticks down maybe 1-1/2".)

Ain't gonna happen, especially under "normal use".

Pep Boys, O'Reilly, AutoZone all have washers. I put on a "banana pan" and now have complete draining of the old oil. It came with a stainless steel magnetic drain plug that had been drilled for safety wire and an aluminum washer.... Pretty slick set up!
The story about the Fumoto that had been knocked off seems bogus - there's a frame member and a bash plate protecting the oil pan and drain plug and a low oil sensor in the pan that should have alerted him to the low oil condition. Don't believe everything you hear.
